I want to made an bivalent heat solution for heating, but need to cut/stop the boiler even when it's needed from the Opentherm thermostat.

Is there an parameter lock the boiler that I can use?

I'm not sure what you mean by "bivalent" in the realm of central heating. But if you want to override the heat demand from the thermostat, set the control setpoint and the central heating enable bit. For example: CS=10, CH=0.
